Vereia cheese is white brined cow cheese, which is produced of 100% first quality cow’s milk, special yeasts and rennet keep. Vereia cheese is produced in conformity with traditional Bulgarian technology for maturation and processing with mastery handed over by the old masters-cheese specialists. Curd is obtained from pasteurized cow’s milk through the addition of yeasts, rennet keep and straining off. After that the most important process comes – maturation, in which the solid and elastic structure is formed, as well as the organoleptic properties of Vereia cheese, i.e. its characteristic thick taste and fragrances. The tradition in the production of cheese is attentively maintained live, which requires the exercise of careful control over all the conditions during its maturation.
